Suggestions

A small sample of recipes I use frequently - they each:
A) Take less than 30 minutes to prep, cook, and serve
B) Are fun and easy to do with a little one (or ones)
OR
C) Are based in the slow-cooker without being in the standard 'crockpot meals' handbook

Korean:
http://bit.ly/25hlJVT - Korean army stew - make this in a slow cooker on low for 4-6 hours, adding the noodles right before serving or just follow it outright and have it ready in 20 minutes. I sub out ham or goat for the SPAM and omit the american cheese altogether, but it's very good.
http://bit.ly/1MyGDnS - Not entirely authentic bulgogi, but quick and easy
http://www.maangchi.com/recipe/easy-bulgogi - Better bulgogi, but slightly more time intensive
American:
http://bit.ly/1pGJuGE - pizza chicken: easy and fun to do with kids. And actually not bad for you or them if you have the right ingredients.
http://bit.ly/1RkoMaJ -  chicken - 10 minutes prep, slow cooker for 3-8 hours, serve
http://bit.ly/1ReZhFz - Great winter soup
http://bit.ly/22t2QQH  - Jambalaya in the slow cooker
Vietnamese:
http://www.hungryhuy.com/banh-xeo-savory-vietnamese-crepes/ - a piece of cake, fast, and herbaceous

My own creations:
http://barideliciousfood.blogspot.com/2015/10/eggs-baridict.html - use real bread/english muffins - the trick here is the EASY hollandaise and soft-boiled eggs
